Could you do a word circle for me that says Happy Anniversary? If you can do it
so it has a mat with it, that would be awesome!

I did one here.. Just move the mat from underneath when cutting in SCAL.

Oh Thank You so much!! I spent days trying to do it myself in Inkscape and was not successful.
